MRS LOCKWOOD’S RECIPES SPICE CAKE
From the fictional world of Mind The Trams
SPICE CAKE
“A proper cake for a proper table.” — Mrs Lockwood
There are some cakes intended for decoration and others intended for eating. I have never understood why anybody would confuse the two.
A good spice cake should be rich, well risen and smell sufficiently inviting that somebody wanders into the kitchen before it has properly cooled.
If that happens, shut the door.
YOU WILL NEED
- ¾ cup butter
- 1¼ cups sugar
- 8 egg yolks
- ¾ cup milk
- 4 teaspoons baking powder
- 2½ cups flour
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon cloves
- ½ teaspoon allspice
MRS LOCKWOOD’S METHOD
Cream the butter thoroughly, then add the sugar and beat until light.
Beat the egg yolks separately before adding them to the mixture.
Sift together the flour, baking powder, cinnamon, nutmeg, cloves and allspice.
Three times, please. Not once and certainly not “until it looks about right.”
Add the flour mixture alternately with the milk, beating the mixture hard and vigorously.
Pour into a well-greased 8 × 12 inch tin and bake for approximately 30 minutes at 350°F.
Allow it to cool before cutting.
Or at least make a reasonable attempt.
MRS LOCKWOOD SAYS…
“Eight egg yolks may sound extravagant. A disappointing cake is considerably more wasteful.”
FROM MRS LOCKWOOD’S KITCHEN
Spice cakes were particularly suited to the Lancashire table: substantial enough for afternoon tea, something to offer unexpected visitors and considerably improved by a strong pot of tea.
Butter it if you must.
Mrs Lockwood won’t be watching.
Probably.
